Buehler has really covered a lot of the scientific details which I am rally looking forward to diving in. I cannot put down this book!! A good edition to the bread bakers library but the gold standard is still Jeffrey Hammelman’s book. Mastering the Art of Extraordinary Bread.
All praise falls flat. Be the first to add buehleer to a list. It’s surprising that it took so long for someone to write this book.
It’s not a book for instant gratification recipes although there are some at the end of the book but gave me a lot to think about re: I have worked at bread for nearly 30 years, sometimes getting good bread, often poor bread–and never knew why the twain ne’er met. The entire chapter is meticulously researched, including references and citations, by Buehler, who has a PhD in Chemistry.
